If you ask me, tiramisu’ is my go-to dessert for any occasion.

I love making the classic tiramisu’ for special occasions, or limoncello tiramisu’ for summer parties, and my Christmas tiramisu’ is always a must during the holidays!

And this strawberry version is my favorite to make whenever I need a tiramisu’ without coffee.

If you replace the zabaglione with whipped cream, is also a fantastic kid-friendly dessert.

The best part about this strawberry tiramisu’ recipe?

You can whip up a stunning Italian dessert with just a handful of simple ingredients – Trust me, it’s going to wow your guests!

Here are the ingredients you’ll need to get started:

  • Savoiardi: ladyfingers or savoiardi are the base of any tiramisu’. Make your own homemade savoiardi or pick good-quality store-bought ladyfingers.
  • Zabaglione: This light frosty custard made with egg yolks, sugar and Marsala wine is an incredible addition to tiramisu’. You can substitute it with an equal amount of whipped cream mixed with 5 tablespoons of sugar, and 1 teaspoon of lemon zest.
  • Mascarpone: A classic tiramisu’ ingredient, if you have time make homemade mascarpone cheese, or choose a good-quality store-bought mascarpone.
  • Strawberry coulis: For this 3-ingredient strawberry sauce you’ll need sugar, lemon and fresh or frozen strawberries.

How to make Strawberry Tiramisu’

This classic tiramisu’ with strawberries couldn’t be easier to make and it takes just 20 minute to prepare.

Here below is the step-by-step process to make the best limoncello tiramisu’ at home!

STEP 1. For the strawberry sauce, blend the strawberries with lemon juice and sugar, then transfer to a pan and cook over low heat until slightly reduced.

STEP 2. For the mascarpone cream, whisk the cheese until creamy, then gently incorporate the zabaglione (or whipped cream), and whisk until smooth.

STEP 3.  Dip each ladyfinger briefly into the strawberry coulis and place over the bottom of a baking dish.

Tip: Don’t soak the ladyfingers too long or they will get soggy. If necessary, break them in half so they can fit into the baking dish.

STEP 4. Spread a layer of mascarpone cream over the ladyfingers, then repeat by adding a layer of dipped ladyfingers followed by a layer of cream.

Refrigerate for at least two hours, top with chopped strawberries and serve.

Storage tips

This strawberry tiramisu’ is always at its best when refrigerated for at least 2 hours, but you may also serve it straight away.

Store leftovers in an airtight container and refrigerate for up to 2 days.

Ingredients

For the strawberry sauce:

  • 600 gr strawberries, + extra to decorate
  • 40 g sugar, approx ½ US cup
  • 2 tablespoons lemon juice

For the strawberry tiramisu’:

Instructions

  • Place the strawberries in a blender and blend until smooth. Transfer the strawberry puree, sugar and lemon juice to a sauce pan and bring to a boil, removing the foam when necessary. When the sauce has slightly thickened, remove it from the heat and let it cool to room temperature.

  • Place the mascarpone cheese in a large bowl and whisk until creamy. Fold in the zabaglione cream and gently mix until combined and refrigerate until ready to use.

  • Dip each ladyfinger briefly into the strawberry coulis, then place in a rectangular 9-inch baking dish, and continue the process until the whole base is covered with ladyfingers. If necessary, break the cookies to fill the base up.

  • Spread half of the prepared mascarpone cream gently over the ladyfingers, making sure they’re evenly covered. You can use a spatula or large spoon to help you with this.

  • Repeat the process of soaking the ladyfingers in the strawberry sauce, then layer them over the cream, until is fully covered.

  • Finally, spread evenly the remaining mascarpone cream on top of the ladyfingers.

  • Place the strawberry tiramisu in the fridge, and allow to set for at least a couple of hours, or overnight. Decorate with chopped strawberries and serve.

Notes

Can I substitute ladyfingers?
Yes, you can substitute it with a sponge cake or angel cake.
Cut the cake into 1cm (½ inch) thick slices and let them dry overnight on a wire rack ( or place them in the oven at 100 C for about half an hour). Then cut the slices into fingers or sticks, and proceed with the recipe.
What if my Tiramisu is soggy and runny?
There are a few reasons you might have ended up with a soggy Tiramisu’:
• You might have overworked the mascarpone cream. Try mixing it delicately and incorporate gently the lemon posset cream.
• Your ladyfingers soaked too much strawberry sauce.  Avoid dipping the savoiardi for too long.
However, please don’t cry over a runny Tiramisu. Place it in the freezer for a couple of hours and serve it as a “frozen dessert”!
