For the Chicken Tikka:

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • ½ cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 2 garlic cloves, minced
  • 1 inch fresh ginger, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • ½ teaspoon paprika
  • ½ teaspoon garam masala
  • ¼ teaspoon cayenne pepper (optional, for extra heat)
  • ½ teaspoon salt

For the Naan Pizzas:

  • 4 ready-made naan breads
  • ½ cup tomato sauce (or pizza sauce)
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup fresh cilantro leaves, chopped
  • 1 teaspoon red chili flakes (optional, for extra heat)
  • 1 tablespoon olive oil (for brushing the naan)


Instructions

  1. In a large bowl, mix the yogurt, lemon juice, vegetable oil, garlic, ginger, cumin, coriander, turmeric, paprika, garam masala, cayenne pepper (if using), and salt. Add the chicken pieces and coat them thoroughly with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
  2. Preheat your oven to 400°F (200°C) or set your grill to medium-high heat. Thread the marinated chicken pieces onto skewers or place them on a baking sheet lined with parchment paper. Bake or grill for 15-20 minutes, turning halfway through, until the chicken is fully cooked and slightly charred. Remove from the oven or grill, and set aside.
  3. Preheat your oven to 400°F (200°C). Place the naan breads on a baking sheet.
  4. Spread a thin layer of tomato sauce over each naan bread. Sprinkle a portion of the shredded mozzarella cheese over the sauce. Top with the cooked chicken tikka pieces. Sprinkle the remaining mozzarella cheese over the toppings.
  5. Brush the edges of the naan with olive oil. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the naan is crisp.
  6. Remove the pizzas from the oven and sprinkle with chopped cilantro and red chili flakes (if using). Slice and serve immediately.
